Summer at Emerald City
My Grandfather used to say that summer’s heart was fired by the flames of all of the lit barbecues during the season. The smell of grilled food mixed with a hint of smoke carried on a warm breeze; reminds me of all of the good summers that I have had as a child with him, clicking his tongs as he readied to “flip or turn, but never burn”. He used to say.
Emerald City 1 is fortunate to have a beautiful terrace on the 5th floor that sports two large gas grills and although we had a slow start to the season, summer is here. Using them is really easy, but first let’s talk about your options.
If you simply wish to cook your dinner on one of the grills and maybe have a couple guests up on the terrace with you, that is not a problem. All you need to do is go to the concierge desk, book a barbecue time (remember, bookings are first come, first served and same day only. There are close to 500 units in the building, so to ensure a spot, you might want to call or visit the desk in the morning) and fill out a non-exclusive use form in order to stay on the terrace or eat in the Party Room.
If you wish to have a party or a family gathering that includes using the barbecues, you will need to book the party room in advance for exclusive use. During your event, the party room, the terrace and the barbecues are yours to use exclusively for the duration of your event. Details and booking forms can be found at the concierge desk or on Building Link.
Now that you have planned your dinner and/or party and have booked with the Concierge, it is time to fire up the grill! There are several locks on both of the barbecues lids and on the gas valves. These are for safety purposes but are easily opened with the keys provided by the concierge when you pick up the barbecue package. The package includes, a wire brush for cleaning the grill, a barbecue lighter and an oven mitt. You will need to provide your own cooking utensils such as a stainless steel lifter or tongs.
Fire it up!
BARBECUE LIGHTING & OPERATION INSTRUCTIONS
OPEN ALL LIDS WHILE LIGHTING.
TURN OFF ALL BURNER AND PILOT VALVES.
TURN OFF GAS SUPPLY VALVE.
OPEN GAS SUPPLY VALVE, WAIT 10 SECONDS.
TURN PILOT VALVE TO ON POSITION AND IGNITE.* USING A BARBECUE LIGHTER IN THE HOLE AT THE SIDE OF THE BARBEQUE.
OPEN AND ADJUST MAIN BURNER VALVES AS DESIRED.* IF IGNITION DOES NOT OCCUR. TURN OFF ALL VAVES, WAIT 5 MINUTES AND REPEAT.
SHUT DOWN: TURN ALL BURNER AND PILOT VALVES TO THE OFF POSITION. TURN OFF THE GAS SUPPLY VALVE.
Please remember: barbecue safely, clean up after you are finished (there is likely someone right behind you!) and Bon appetite!

DOUG'S EVERYTHING BUT STEAK -BBQ
Ingredients (4 cups)
2 Tablespoons coconut oil
½ Spanish onion, minced
1 Garlic clove, minced (Ontario Heritage Garlic is the way to go)
¾ cups apple cider vinegar
¾ cups distilled white vinegar
2 cups tomato sauce
2 Tablespoons tomato paste
3 Tablespoons raw (preferably organic) unpasteurized honey
Sea salt and Milled pepper to taste
1 tbs hot sauce (to give it a kick)
Fresh herbs to taste (I recommend fresh basil)
Add oil to medium sized skillet.
Add onions, garlic and allow to caramelize.
Add additional ingredients.
Simmer for an hour.
